Saslik's sommelier Cilla Impola recommends to try champagne and sparkling wines not only as aperitif but also with starter dishes. "We have a good selection of both to be enjoyed with Russian delicacies. For an extra festivity champagne bottles can opened with the "Sabrage" technique. The saber is slid along the body of the bottle to break the entire neck away from the bottle, leaving only the base of the bottle open and ready to pour. "The most classic combination is of course caviar and champagne but also blinis with sour cream and fish roe or zakuska starters are perfect with sparkling wines."
